Vegan Coconut Curry Tofu

Prep Time: 30 Minuets Serves: 4

Ingredients: 

  • 1 package of extra firm tofu, chopped in cubes
  • 4 ounces of coconut cream, melted
  • 1 cup of water
  • 1 tomato, chopped
  • 1 onion, chopped
  • 2 tbps of curry powder
  • 1/2 clove garlic, chopped
  • salt and pepper to taste

Directions:

Pour coconut cream into a pan on medium heat. Add onions and garlic. Saute' for 10 mins. Add water, curry powder and tofu. Sprinkle salt and pepper to taste. Bring to a boil for 5 minuets. Return to low/medium heat. Add tomatoes. Simmer for 15-20 mins. Serve over white rice as shown or use brown rice, quinoa or your preferred grain. Enjoy!
