Vegan Black Bean & Corn Salad

Prep: 25 Mins           Serves: 12

Ingredients: 

  • 4 cups of cooked black beans (soak overnight and cook)
  • 1 1/2 cups of fresh corn (cooked)
  • 1 tomato diced
  • 3 tablespoons of mined garlic
  • 1 yellow onion
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1 tsp lime zest
  • 6 tbsp lime juice
  • 1/2 cup fresh chopped cilantro
  • 1 Haas Avocado

Directions: Combine all ingredients except the avocados. Mix everything in a large bowl. Cover and chill for 2-3 hours. Before serving add avocados. Top with fresh cilantro. Enjoy!
